With summer here and so many of us avoiding using our ovens, I thought it was time to revisit this post from my gfe bread series, A Bountiful Bread Basket: Gluten-Free Bread Recipes, on making gluten-free bread in a bread machine.
Not only does using a bread machine (you might call it a breadmaker) just seem more “doable” to many than making a loaf of bread from scratch and having to remember to do all the steps correctly. Baking bread in a bread machine also keeps almost all of the heat out of your kitchen. A bread machine is actually a compact oven so using one is similar to using a toaster oven versus a standard oven.
Some of you are not sure which brands of bread machines are best for making gluten-free bread. And some of you want to know how to take a great gluten-free bread recipe that calls for the bread to be baked in the oven and instead make it in your bread machine.
I’m happy to say that I’ve called on some gluten-free experts to give you the answers to both those questions in Part 3 of our series, A Bountiful Bread Basket, Part 3: Top 20 Best Gluten-Free Bread Machine Recipes, Plus More Info on Bread Machines.
I’ve also added many new reader reviews of these recipes as new folks are always trying these recipes and providing feedback to the recipe creators. I’m sure you’ll want to know what they have to say as many also provide information on substituting ingredients as well.
As most of you know, this series on great gluten-free bread recipes is a multi-part series and an ongoing series. I’m sure that this post will not be our last discussion on baking great gluten-free bread in a bread machine—and which bread machines are the best choices for doing so.

Info and Tips on Baking Gluten-Free Bread in a Bread Machine (aka Breadmaker)
First, here are some tips from some well-known, much respected folks in our gluten-free community. Today they’re serving as our gluten-free bread baking experts!
Take time to read their posts because they have the answers to the questions you have on making gluten-free bread in a bread machine. One important point that I’ll call out here is that you don’t need a bread maker that has a gluten-free setting to bake great gluten-free bread. Simply use the shortest cycle on your bread machine.
Naomi of Better Batter says: “The difference between a normal setting and a gluten free setting is that the gluten free setting omits the second rise and the punching down of the bread.” She adds that sometimes the express setting is the one you want to use because that omits the second rise.
Likewise, Linda of Gluten-Free Homemaker recommends using the shortest setting on your bread machine if it does not have a gluten-free setting. If your bread machine has programmable cycles, Gluten-Free Mom points out that “you have the flexibility of selecting just one knead and one rise cycle which is all you need for gluten free bread.”

“I get consistent and amazing results by weighing the flours. For instance, the GF recipe that came with the machine calls for 3 and 1/3 cups of flour. No matter how gently I scoop and sweep I measure anywhere from 2/3 to 1 cup more flour than if I go by weight. With the extra flour I get the bread that is better than cardboard but still really dense. Every time I go by weight, I get spongy soft bread that even the gluten eaters enjoy. 140 g= 5 oz= 1 cup volume has been working well on my cruddy non digital scale. If you have a digital scale, 140 g is supposedly the better number.
I’ve resisted using my scale for a few years, but didn’t want to keep wasting the Better Batter flour. It’s so worth going by weight that I know I’m repeating myself.
Also my machine tends to over cook on GF setting so I have to pull it out 30 minutes early. I still get a temperature reading of 205-210 on my loaves so they are done by then. You will have to smell, watch and take temperature readings if your machine is quirky.”

I thought this recipe with her reader’s directions would be a great example of how you can make just about any gluten-free bread loaf recipe in a bread machine if you follow some basic instructions.

My bread machine has a gluten free setting. You’ll need to put the ingredients in the order according to your brand of bread machine (for example: mine says to put all liquids in first, then dry ingredients and then yeast on top- making sure yeast doesn’t touch any liquid) then I set it for the gluten free option, set it at 1 &1/2 lb loaf and medium darkness and it was wonderful, moist, crusty on the outside and nice texture. My husband said it was delicious. I did have to substitute about 3/4 of the ratio of sorghum flour (only because I had so little brown rice flour) but it was great.”
